Wholemeal Scones

Growing up in a small country town I worked in the local cafe, we made traditional scones daily. I could never resit them, straight out of the oven warmed with raspberry jam. Since changing my diet to plant based, I haven’t found a scone recipe that is simple yet delicious, so I decided to create my own healthy version! Eating these scones took me back to my days in the small cafe.

2 tsp apple cider vinegar
200ml soy milk
2 tsp vanilla essence
1 tsp maple syrup
300g wholemeal plain flour
1 tsp baking powder
1 tsp bicarb soda
1 tsp salt
80g vegan butter, cold

1. Mix apple cider vinegar, soy milk, vanilla essence & maple syrup into a bowl and let curdle
2. Add all dry ingredients to a bowl and mix until combines
3. Add butter to dry ingredients bowl and combine with hands
4. Add wet mixture to dry mixture and mix with a metal spoon until combined
5. Sprinkle flour into a bench and kneed dough until combined, you may need to add more flour depending on the consistency of your dough
6. Cut your scones with a cookie cutter, knife or any utensil you please
7. Spread baking paper on a baking tray and place scones onto tray, bake at 220C for 8-12 minutes or until brown
