Its summer at the moment, meaning its smoothie bowl time! I love having smoothies for breakfast because they make me feel my best, are packed full of nutrients and contain the perfect ratio of carbohydrates to protein to maximise recovery after an intense training session. Though smoothies don’t always keep me full, so I have been experimenting with smoothie toppings to keep me full, this is what I have created. I use this granola as a topping for almost all of my breakfasts including my fast super cereal, green smoothie and açai bowls. It adds a sweeter taste and a crumble texture whilst keeping me full until lunch.
Ingredients
1 cup rolled oats
1/4 cup desiccated coconut
1/2 cup flaxseeds
5 medjool dates
1/2 cup macadamias
1/2 cup buckwheat kernals
Directions
1. Place all ingredients in a food processor and blend until combined
