Healthy Sweet Potato + PB Brownies

Brownies and healthy don’t normally exist in the same sentence but I assure you, these are healthy! Well as healthy as brownies can get. My family (mainly me) ate these babies in just 2 days! The smell as they are cooking in the oven is mouth watering. This recipe cannot fail, peanut butter, chocolate and sweet potato.. my favourite ingredients all in one! I was super excited to share this one with you guys as I know you will love them as much as I do. Did I mention these can be gluten free! Just sub oat flour with almond meal.

Ingredients
1 cup peeled sweet potato
3/4 cup cacao powder
1 cup rolled oats
2.5 cups dates
4 tbs maple syrup
2 tbs peanut oil
2 tsp cinnamon
1 tsp salt
1/2 cup dark chocolate
1/2 cup 100% peanut butter

Directions
1. Preheat oven to 160C
2. Soak dates in hot water for around 10 minutes
3. Steam sweet potato
4. Blend oats into oat flour
5. Add dates, cacao powder, peanut oil, maple syrup, oat flour, salt and cinnamon into a food processor and blend until combines
6. Pour mixture into a large mixing bowl
7. Add in steamed sweet potato and mix until combined (can do this step in food processor)
8. Stir in chopped up dark chocolate and pour mixture into a tin
9. Using a spoon and hot water, pour peanut butter onto the top of the mixture and spread out. The hot water on the spoon should make sure the PB sticks to the brownie rather than the spoon. If all else fails just use your hands
10. Place in oven until cooked ~40 minutes
