Do you struggle to know what to make for breakfast?
Not eating breakfast has been highly associated with obesity, high fat and energy intake throughout the day. Breakfast should be your biggest meal to give you energy for the rest of the day.
There are so many breakfast foods out there it’s hard to know which one is best. Personally, breakfast is my favourite meal of the day because let’s face it, breakfast is the most delicious meal and it gives me the energy I need for the rest of the day! Depending on your morning schedule breaky can take you 5 minutes to hours! All my breaky recipes take 20 minutes or less and are full of goodness which will leave you full for hours and not snacking on that chocolate bar at 11 am.
Overnight Oats
Ingredients
¼ cup rolled oats
½ cup water
½ cup soy milk
1 tsp cinnamon
1 mashed banana
1 tbs chia seeds
Directions
The night before adding all ingredients into a jar or container and leave in fridge overnight. Enjoy the next morning
Acai Bowl
Ingredients
1 frozen banana
1 cup frozen raspberries
1 tbsp acai powder
1-2 cup coconut water
Toppings
Chia seeds
Hemp seeds
Pepitas
Banana
Directions
1. Add all ingredients to a blender and serves in a bowl
2. Add desired toppings
Green smoothie
Ingredients
2 cup baby spinach
1 cup coconut water
1 frozen banana
1 cup frozen blueberries
1 tbs chia seeds
Optional – Mango or orange

Sweet Potato Porridge
Serves 2
Ingredients
1 cup steamed and peeled sweet potato
1/2 cup rolled oats
1 mashed banana
1 tbs peanut butter or nut butter
1/2 cup hot water
1 cup soy milk or any milk you like (may need more)
Directions
1. Add all ingredients besides milk into a saucepan on medium
2. Stir until combined and add milk (if oats are dry add more hot water or milk)
3. Serve with your choice of toppings!
Pancakes
Serves 2-3
Ingredients
1 mashed banana
2 tbs honey or maple syrup
1 tsp cinnamon
1 1/2 cup soy milk
1 1/2 cup wholemeal flour
1 1/2 tbs baking powder
3 Tbsp. olive oil or canola oil
Directions
1. Add all dry ingredients and mix until just combined
2. Add wet ingredients and mix until just combined
3. Let sit for 5 minutes then pour onto a non-stick pan and enjoy!
Scrambled Tofu
Ingredients
250g tofu
½ onion
1 cup water
2 tbs cumin
2 tbs turmeric
1 tsp paprika
Directions
1. Sauté onion with spices in a fry pan until onion is brown
2. Crumble tofu into pan and cook for 5 minutes
3. Serve on whole grain toast, hummus, avo, tomato, spinach, kale, Pepitas and lemon
