Creamy Sweet Potato Porridge

Vegetables for breakfast are always a great idea, especially when it is sweet potato!

Breakfast is my favourite meal of the day and it should be your biggest meal to give your body the energy it needs to get you through the day. Adding high protein foods (hemp seeds), good fats (chia, peanut butter & pepitas) and complex carbs (oats & banana) to your breaky gives you longer lasting energy without that mid-morning sweet craving.

This breaky sounds odd but trust me it is delicious!
You can make a big batch of this and keep it in the fridge for breaky throughout the week, eat it cold or heat it up by adding some hot water and popping it in the microwave for 1 minute.

Ingredients:
Serves 2
1 cup steamed and peeled sweet potato
1/2 cup rolled oats
1 mashed banana
1 tbs peanut butter or nut butter
1/2 cup hot water
1 cup soy milk or any milk you like (may need more)

Directions:
1. Add all ingredients besides milk into a saucepan on medium
2. Stir until combined and add milk (if oats are dry add more hot water or milk)
3. Serve with your choice of toppings!
