Sunday mornings are for waking up late and making banana pancakes. Iove having Sundays off and making these for Charlie and I. If I’m feeling adventurous I will even add some vegan choc chips which just make these pancakes to die for!
Vegan pancakes are hard to master though even I was surprised at how fluffy they turned out. These are guilt free and really simple to make with everyday groceries, you don’t need 1/2 tbsp of barley flour that cost $30 for 500g.
Ingredients:
Serves 2-3
1 mashed banana
2 tbs honey or maple syrup
1 tsp cinnamon
1 1/2 cup soy milk
1 1/2 cup wholemeal flour
1 1/2 tbs baking powder
3 tbsp olive oil or canola oil
Directions:
1. Add all dry ingredients and mix until just combined
2. Add wet ingredients and mix until just combined
3. Let sit for 5 minutes then pour onto a non-stick pan and enjoy!

Honey
Maple syrup
Raspberry Jam
Fresh berries
Kiwi fruit
