If you are like me and struggle to know what to cook for dinner and have old veggies in the fridge, this is a great base recipe to make.
You can make this chilli as spicy or mild as you please. This is also a great meal to cook someone who doesn’t love their veggies because it is such a flavour filled meal they won’t even realise they are eating veggies.
Note: For a mild chilli only add 1 red chilli and 1tsp of both cayenne pepper and paprika
Add any veggies or legumes you like!
1 cup water
2 finely cut red chilli’s
2 tbs cumin
1 tbsp cayenne pepper
1 tbsp ground paprika
2 can crushed tomato’s
1.5 medium sweet potato’s
1 cup green peas
1 can kidney beans
3 handfuls chopped kale
1. Sautee onion in water
2. Add spices and chilli’s
3. Add canned tomatoes and sweet potato. Let cook until potato is soft
4. Add peas, kale and kidney beans
5. Let simmer for 10 minutes
6. Serve over rice or eat it on its own
